Masala dosa (ಮಸಾಲೆ ದೋಸೆ)


Masala dosa (ಮಸಾಲೆ ದೋಸೆ) is one of the most popular South Indian breakfast dish. Dosa is a crepe made using fermented rice batter. Masala dosa is one that is crisp, aromatic, flavorful and has a potato masala stuffed in it and it is served with coconut chutney and sambar( veg gravy) . Masala Dosa with combination of coconut chutney and sambar( veg gravy) gives nice flavor. The combination of all these three makes you feel like you are in heaven. Here I am going to give you the recipe of Masala Dosa how my it can be prepared at home with available ingredient at home

Ingredients required:
 For Dosa For stuffing
 
Raw rice- 1 cup
Black gram -1/4 cup
Chick pea- <1/4 cup
Spit gram- <1/4 cup
Fenugreek seeds- 1 tsp
 

Preparation of stuffing:
-Heat the pan and add 2 tsp oil.
-As oil heats up add mustard seeds and wait till it pops.
-Then add cumin seeds saute it well, Keep the flame medium to low otherwise it will burn.
-Next add Green chilies as per your requirement.
-Next add curry leaves fry it well till all ingredients leaves its flavour in the oil(Do not burn)
-Next add onion, fry until its raw smell goes away(Do not brown/caramelize)
-Add turmeric powder and mix it well. It gives special aroma.
-Add Salt to taste.
-At last boiled potato and mix it well keeping at low flame OR by turning off the flame.
-Now your stuffing is ready.

Preparation of Dosa:
-Soak all ingredients(Rice, Black gram, Chick peas, Split gram, Fenugreek seeds) all over night / till it get fermented. Grind all these in wet-grinder to get smooth batter from it (Suppose batter is not fermented you can also add curd to it to get batter to ferment)
-Add salt according to taste mix the batter well.
-Heat the Dosa pan and then sprinkle and spread some water.
-Which helps to spread the dosa batter over the pan very thin with less effort.
-Spread the dosa batter over the pan as per your required size.
-Add some oil to taste better.
-As dosa is cooked ready, stuff the filling masala and serve.
-Taste the Masala Dosa with coconut chutney and sambar, it is just AWESOME.

NOTE- If you use wet-grinder, more air is trapped in the batter and makes Dosa more smooth and crispier.

T02- Precaution to be taken on Lathe

Before working :- - Ensure that the electrical power supply is as needed for the machine. Ensure that the safety guards are in proper condition.  - Ensure that the work area is clean and tidy. - Ensure that the meshing gears are in proper mesh, and the power feed levers are in neutral.  - Ensure that the automatic lubricating system is functioning.  During working:- - Shift the levers to change the speeds and feeds only when the rotating parts are fully stationary.  - Wear an apron (not too loose) with the sleeves of the shirt folded. - Avoid wearing rings and watches when working. Wear shoes to avoid injury to your feet.  - Remove the chips by a hook, and use a brush to clear them.  After working:- - Clean the machine with a brush and wipe with cotton waste.  - Oil the bed-ways and the lubricating points.  - Clean the precision instruments and hand them over to the instructor for safe keeping. - Clean the cutting tools and place them in their respective places.  - Clean the area surro
