Turmeric leaf Sweet kadubu/dumplings| ಅರಿಶಿನ ಎಲೆಯ ಸಿಹಿ ಕಡುಬು


    Sweet kadubu / dumplings(ಅರಿಶಿನ ಎಲೆಯ ಸಿಹಿ ಕಡುಬು) is well known in Coastal Karnataka. It is a dumpling in which coconut and jaggery is stuffed and is covered with fragrant turmeric leaf. This flavorful, sweet and healthy dumpling is prepared especially during festivals. It is a very special dish, that should be try at-least once. Here I will be giving recipe of same.

Preparation of stuffings-

- In a pan add jaggery and little quantity of water.
- Cook this in medium flame till jaggery dissolves and becomes frothy.
- Next add coconut and cardamom (optional), mix well.
- Cook till moisture gets evaporates and mixture comes together.
- Switch off the flame, the stuffing is ready now.

Preparation of dough-

- In a container add salt to taste
- Pour the water which is at room temperature
- Then add semolina and wheat flour in equal quantity
- Mix well and Kneed to form a smooth dough
- Mean while if you feel dough is hard add little amount of water
- Let it rest for 15 minutes.

Procedure:

- Clean the turmeric leaves and place one aside another.
- Then take a small ball of dough and pat a thin layer on the turmeric leaves.
- During patting if you feel the dough sticks to hand, have a dip in water while patting dough.
- Add two spoonful of coconut stuffing, fold and seal the edge.
- Then cook the dumpling in Idli steamer closing the lid.
- The change in color of leaves ensures proper cooking of Dumplings.
- Let the dumpling cool in steamer with closing lid. This will cause absorption of aroma of Turmeric leaves by dumplings.
- Remove the turmeric leaf and enjoy the healthy flavorful Sweet.
Note:
- When cooking jaggery, do not add too much water which makes the stuffing runny.
- Peeling of leaf will be easy only when dumpling cools down.
- The taste of dumpling enhances when refrigerate it.

T02- Precaution to be taken on Lathe

Before working :- - Ensure that the electrical power supply is as needed for the machine. Ensure that the safety guards are in proper condition.  - Ensure that the work area is clean and tidy. - Ensure that the meshing gears are in proper mesh, and the power feed levers are in neutral.  - Ensure that the automatic lubricating system is functioning.  During working:- - Shift the levers to change the speeds and feeds only when the rotating parts are fully stationary.  - Wear an apron (not too loose) with the sleeves of the shirt folded. - Avoid wearing rings and watches when working. Wear shoes to avoid injury to your feet.  - Remove the chips by a hook, and use a brush to clear them.  After working:- - Clean the machine with a brush and wipe with cotton waste.  - Oil the bed-ways and the lubricating points.  - Clean the precision instruments and hand them over to the instructor for safe keeping. - Clean the cutting tools and place them in their respective places.  - Clean the area surro
